In the heart of Bologna, within a charming 13th-century courtyard, the historic Trattoria La Corte Galluzzi is at the centre of a fascinating project: bringing forgotten recipes of Bolognese cuisine back to life.

Following a careful restoration, the restaurant now presents itself as a space rich in history and atmosphere—perfect for a culinary concept that looks to the past with respect and passion. The new management, supported by food historian Luca Cesari, has created a menu that is a true journey through tradition, rediscovering dishes that had disappeared from tables and reviving recipes from “Science in the Kitchen and the Art of Eating” Well by Pellegrino Artusi.

The result is an authentic experience, where every dish tells a story. Starters reflect humble rural cooking, with simple yet genuine offerings such as tuna with beans and onion or calzagatti, while crescentine served with cured meats and cheeses instantly evoke the convivial spirit of the past.

At the heart of the menu lies handmade fresh pasta, the undisputed symbol of Bolognese tradition. Dishes such as gramigna with sausage, maccheroni with friggione, and strettine with Parmesan and prosciutto tell the story of a cuisine built on time-honoured gestures and bold flavours.

Main courses follow the same philosophy, alternating between great classics and historical recipes inspired by Artusi, prepared using techniques faithful to the original period. Grilled meats and more refined preparations are also featured, all united by a strong focus on quality and tradition.

The journey concludes with desserts that evoke memory, such as the original version of zuppa inglese or fried tagliatelle—sweet treats that bring you back to the Bologna of the past.
