Ristorante La Castellana
The Essence of Tuscan Truffle and Tradition
In the heart of the medieval village of Montefioralle, one of the most enchanting hamlets of Chianti Classico, Ristorante La Castellana represents one of the most genuine expressions of traditional Tuscan cuisine.
This small family-run restaurant is immersed in a uniquely panoramic setting, where the cuisine follows the rhythm of the seasons and exceptional ingredients become the undisputed protagonists.
The philosophy of the restaurant is deeply rooted in Tuscan rural traditions, particularly the ancient hunting culture of wild boar, pheasant and hare, which still inspires many of the dishes served today. The recipes are simple in structure yet rich in character, built around bold flavours and carefully selected local ingredients.
One of the defining elements of La Castellana’s cuisine is undoubtedly truffle, available throughout the year in different varieties and interpretations. It is served fresh over pasta dishes, meats and starters, or presented in more creative combinations such as burrata and tomino cheese with truffle, alongside traditional crostini and bruschette. Truffle can also be enjoyed raw in delicate shavings or enhanced in warm dishes that highlight its intense and lingering aroma.
Alongside this iconic ingredient, the restaurant also offers fresh mushrooms, often served grilled, crispy or in carpaccio form, accompanied by melted cheeses or warm preparations designed to enhance their texture and flavour.
Fresh pasta is another cornerstone of the kitchen. Tortelli and ravioli are prepared with traditional fillings such as ricotta and lemon, or richer combinations including mushrooms and truffle. Pappardelle with wild boar ragù remains one of the most representative dishes of the local tradition, together with taglierini served with meat sauces or fresh truffle, perfectly embodying the spirit of Chianti cuisine.
Among the main courses, guests will find dishes deeply connected to Tuscan farmhouse and hunting traditions: slow-cooked wild boar stew, peposo all’imprunetina, eggs with fresh truffle and grilled meats, especially sliced beef steak served in several variations, from lardo and rosemary to truffle pairings. The celebrated Bistecca alla Fiorentina, one of the absolute symbols of Tuscan gastronomy, is also available according to weight and seasonal availability.
The gastronomic experience is completed by a selection of traditional starters that reflect the simplicity of local cuisine: Tuscan crostini, bruschette with tomato or beans, carefully selected cured meats and cheeses enriched with regional ingredients such as Lardo di Colonnata and fresh truffle.
A distinctive aspect of the restaurant is its strong connection to the territory through experiences dedicated to the “Prince of the Table”: La Castellana organises truffle hunting excursions in the Chianti woods alongside local truffle hunters and their trained dogs, followed by dedicated tasting experiences that allow guests to enjoy the entire journey “from forest to table”.
The cuisine changes with the seasons and follows a precise philosophy: to celebrate what nature offers at the right moment while maintaining a deep connection with Tuscan culinary traditions. This approach ensures that every visit is unique and closely linked to the time of year, always offering new flavours and interpretations.
