The traditional balsamic vinegar of Modena P.D.O.
The ancient Acetaia (vinegar producer) Fabbi started in Modena in 1910 as a producer of Traditional Balsamic Vinegar of Modena P.D.O.
The vinegar is obtained exclusively from the Trebbiano modenese grapes of the vineyard owned by the company; the must achieved is boiled over a naked flame in an open container.
Afterwards, the vinegar is aged and matured in special wooden barrels aged at least for 12 years for the Traditional, over 25 for the Extra-Old, following the ancient technique of “transfers and fillings” is poured into smaller barrels, where it concentrates, ripens and refines.
Ancient Acetaia Fabbi is a family company, today the fourth generation, with a documented history.
One of the oldest and suggestive vinegar producers in Modena, it has a cellar containing numerous barrels to be considered one of the largest active on the market.
The Acetaia is fond in an Emilian-Padano's country style residence, where visitors can take a guided tour in Italian or English language, where, at the end, they will have the possibility to taste the traditional balsamic vinegar of Modena P.D.O. in its different maturing stages.
