From small farmers they procure delectable cheeses, produced using secret methods from the past, speck, “carne salada”, matured wild game sausages, selected Scottish beef (Highlander), bred in the wild in the Highlands ; from an artisan mill comes both classic and flavoured flours and from local producers excellent wines.
